LISBON PHOTOGRAPHY AND PASTEIS DE NATA
What better way to use up the spare egg yolks from a batch of meringues than to try out a new recipe? Luckily, this Pastel de Nata recipe landed in my lap just at the right time. I had spotted Kristen Johns' video making pasteis de nata (the plural of pastel, my uni friend studied Portuguese) the same week that I settled on baking white chocolate dipped meringues (also, delicious!).
These custard pastries worked out perfectly, and on my first attempt - the recipe must be pretty foolproof! Making the tarts reminded me of the fresh, authentic versions I consumed, in perhaps an alarming quantity, in Portugal in 2018. I have written about my time in Porto already, but it occurred to me that I never shared photography from the second leg of that trip: the capital city of Lisbon.
Lisbon is a beautifully colourful, incredibly hilly coastal city with a rustic, relaxed vibe. This pastel de nata recipe transported me back there, and the gorgeous weather we are experiencing right now was enough to give me the illusion that I might be on holiday.

PASTEL DE NATA
This is the pastel de nata recipe I used, but I increased the quantities to make 12. I also used a sheet of puff pastry because honestly I couldn't be bothered to attempt rough puff and I was worried it would go wrong!
QUANTITIES FOR 12 TARTS
Custard:
30g flour
1/2 tsp cinnamon
Pinch of salt
50ml whole milk/140ml whole milk
5 egg yolks
1 1/2 cinnamon sticks
1 1/2 vanilla bean/extract
130ml water
180g sugar
3/4 tsp vanilla extract
If you're making the pastry, these are the measurements you would need. Alternatively, I used one pack of pre-rolled, cold puff pastry.
Pastry:
450g flour
3/8tsp salt
315ml water
270g very soft butter

Nice post! Your blog about Lisbon photography and Pasteis de Nata has certainly caught my attention. I never planned to visit Portugal but after coming across your blog I feel like I should apply for a Portugal Visa Online. I will be searching for the place that you shared images of as they like wonderful places to visit. I am sure my wife would love this international trip to Portugal.
